Fear and Trembling is Hill Farmstead’s first collaboration – a Baltic Porter brewed with malt that was hand-smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This bottled version was aged in Bourbon barrels. As a student of philosophy and former resident of Copenhagen, it is fitting that our brewer named our first collaboration after Denmark’s great thinker: Søren Kierkegaard. All three contemplated absurdity, faith, and salvation while wandering the shores of the Baltic Sea…

2016 bottle at Torst, 4/28/23. Clear dark maroon, bit of tan bubbling on the edges. Very soft, minimal bourbon and a ton of rich, salty, dry smoke. Char, light vanilla and just more smoke for days. No alcohol. Soft, malty, sweet and acidic up front with bready smokiness coming in. Not quite as elegant as the nose, with a very dry, highly attenuated body through middle and end. Bourbon is dry, tea-like with drying spice and strong whiskey. Just needs a bit more oomph in the malt depth/texture category to tie it all together, but assuming this has attenuated quite a bit in 7 years, I can cut it some slack.

Bottle @ Steve_0’s HF party. Thanks André! Black appearance with a dark brown head. The aroma isn’t overly potent with light smoke, chocolate, cookie/graham cracker, mild whiskey aroma. The body is a touch thin. More whiskey in the mouth. Dry. Meaty smoke. Good.

Bottle thanks to Phil. Pours a very dark brown with small beige head. The aroma is strong smoke, ash, bourbon, wood. Medium mouth, rich malt, cocoa, roast, smoke, dark fruit, wood, maple, good.

Bottle in NH - massive thanks to Wally for sharing. Pours clear, black-brown with a creamy, tan head. Gorgeous nose with restrained bourbon, rounded chocolate, hints of vanilla and smoke. Medium to big sweet flavor with strong smoke, mellow bourbon, ham, faint minerals, a bit of honey and caramel. Full bodied with fine, chewy carbonation. Robust smoke in the finish, with faint warmth, nice cured ham, background cocoa. Superb balance here. Exquisite beer.

Having this with friends on a warm August in New Hampshire.
br> A - Oily black, midnight colours
br> S - Very smoky. Hints of oak and bourbon but it’s not as dominant as I would expect. naturally, there’s vanilla at the finish.
br> T - Coffee dominates the front, lots of campfire smoke and a nice level of burn from the bourbon but not too much. Finish and still smoky, charred and powerful.
br> M - 20% carbonation, heavy body.
br> O - This beer, like many of Shawn’s beers, should be consumed reasonably fresh. This is a great beer but the smoke is powerful.

Bottle thanks to thirdeye11. Pours with a black body and a quick to fade brown head with a tan ring. Aroma of bourbon, smoke, corn flakes (cereal), maple and brown sugar. Flavors are brown sugar, bourbon and alcohol with a light smoke presence. Slick mouthfeel.

Bottle shared by beerloco. Pours black. Nose and taste of rich bourbon barrel, light wood smoked chocolate malts and vanilla.

Bottled. A black beer with a red shine under a lazing tan head. The aroma has strong notes of smoke as well as medium notes of bacon and roasted malt. The flavor is sweet witih strong notes of smoke from beech wood, combined with medium notes of bacon, roasted malt, and alcohol, leading to a dry roasted finish. The alcohol tickles the tongue and palate. Thanks yespr for sharing.

Bottle thanks to Paul, shared with others! Pours a dark brown with a brown head that dissipated quickly to the edges. Aroma has a nice combination of smoked meat (ham) with a bourbon note and backing roasted dark grains. Flavor begins with roasted and smokey malts but has a growing bourbon note to help balance out the smokiness.
