Georgia Candy Roasters are a fascinating and delicious heirloom squash variety. Originally cultivated and bred by the Cherokee, they’re known for their massive size (often over 20 lbs) and uniquely sweet, nutty flavor. We roasted 400 lbs. of locally grown Candy Roasters over a pit of coals and incorporated them into a characterful mash. A final conditioning step on vanilla beans and Sugar Maple wood adds an impression of sweetness while Amburana wood spirals lend an aroma of baking spices.

Bright Brett and moderate lacto show decent aging with no big edge. Some nuttiness/earthiness and peachy fruitiness is softened by a tasteful vanilla addition. Very lovely, aromatic, clear and playful.
Yummmm. Soft and mildly tart with a healthy malt sweetness and nutty richness. Succulent vanilla balances peachy acidity with no aggressivity. This is the kind of sour I with more people could be exposed to. Not a kettle sour and not ridiculously sour.

On tap at Tørst. Pours orange gold. Cinnamon, sharp, earthy, caramel, vanilla, maple. Medium body. Very good.
