London Fog has pretty much taken the brewery by storm since we first started using it a couple of weeks ago. The esters this strain gives off make it a pleasant change from our bespoke LA3 strain that populates most of our beers. With our new brewery floor sending our brew plans into a topsy turvy mess, we’ve had our owner Sean taking the reins for a couple of solo brew days on the weekends, and being one to never miss an opportunity to play with something new in the brewhouse, booked himself in to tackle a mega smashable pale ale. Utilising a three way dry-hop lineup of Azacca, Citra, and El Dorado, this pale positively drips with mango, passionfruit and papaya, before Azacca acts as the catalyst to switch from sweet tropical notes, to pithy citrus, rounded off and doubled up with Polly’s stalwart, Citra.
