Barrel Aged Wild Sour Farmhouse Ale
On a barrel, the croze is a groove that is cut near the ends of the oak staves. When assembled, the head of the barrel sits in that groove, thus making the barrel tight.
This beer was kettle soured with our house lactobacillus culture, then transferred to Okanagan chardonnay barrels to continue to sour and ferment with brettanomyces.
