From the beginning we've always wanted to create great tasting mixed fermentation beers with a sense of place, sourcing barley, hops, yeast as well as other ingredients within a few miles of the brewery. Situated on site of the White Horse Inn, a historic country pub that centuries ago malted barley for brewing their own beer, we decided to brew a beer that represented that history. It's made with our own well water, local organic hops & barley & floor malted wheat. We then ferment it for a few months in oak with a mix of our own yeast & a traditional farmhouse strain to create a dry, sparkling, funky bug drinkable beer. The first 2 batches of this beer were only available in keg & reserved for its namesake pub but this time we've decided to also fill 400 bottles to allow a wider audience to enjoy our house saison.

Appearance - 6 | Aroma - 7 | Flavor - 7 | Texture - 8 | Overall - 8
75cl bottle from Hoptimism. Appearance - cloudy amber, steady carbonation that softens after a few minutes. Nose - wood, apple skins, edge of nettles. General tark, funkiness. Taste - wood and apple skins again. Palate - light bodied, tart and funky, long tart finish. Overall - very nice. Was expecting some saison yeast notes but this was more down the wild/sour style.
