After a first top fermentation, Vivat Triple benefits from an old-fashioned skimming, by hand with an open tank system unique in France. This golden, two-grain beer is then kept in a tank for a secondary fermentation of around 4 weeks before continuing its refining thanks to a triple fermentation in the bottle. Two strains of yeast are involved here to carry out the different fermentation processes! Vivat Triple has a sweet aromatic complexity with citrus notes, perfectly balanced, with good length in the mouth.

A real bottle conditioned beer directly inspired from the Vivat Blonde, they share the same specific yeast and same cocktail of hops. It is the slight addition of spices that combine with the refermentation in bottle that gives this beer all of its aromatic complexity, sweet with citrus notes. Perfectly balanced, a generous hopping, a round and long finish are the main qualities of this exceptional beer.

Bottle, 75cl corked. A huge, off-white head forms over an almost clear, golden body. Nice lacings left. The aroma is nice but a bit dull. Fruity, lightly malty and bitter with a touch of spices. The same goes for the flavor, it’s not bad in any way, but it could use a bit more punch. Both bittermess, fruityness and spices are low, and I think it’s a bit sweet. Full-bodied, nicely carbonated. Well, sure drinkable. 120107

Pours cloudy golden with a white head, Aroma has notes of malt, dried fruits, grassy and floral hops. Taste is medium sweet and light bitter. Body is medium, texture is oily, carbonation is soft.

Bottled (thanks Samuli!). Hazy deep golden colour with a small, but long lasting white fluffy head. Leaves some lace. Aroma is fruits, sweet malty notes as well as mild bready and some spices. Flavour is very similar in a quite nice balance. Also mild alcohol shows. Nice tripel.

500mL bottle, pours hazy golden with a big white head. Aroma of potent yeast, citrus, apples, and wheat. Flavour of apples, citrus, yeast, and some sweetness. Quite good.

Bottle. Creamy white good mostly lasting head. Yellow colour. Moderate malty and hoppy aroma. Slightly sour. moderate bitter flavor. Average moderate bitter finish. Some fruity notes but sourness overpowers the licorice notes. Creamy palate.

Bottle, 8.3%. Almost clear golden colour. Small stable creamy white head. The flavour is sweet and yeasty at first. Then comes a rather citric note. A bit like dirty rag, but not as bad as that, fortunately. Good mouthfeel. 5 3 5 3 11
