Made with Ontario grain, hopped with aged and fresh hops, and naturally cooled overnight in our coolship. We fermented this one in stainless steel and aged it in French oak until it was tasting just right. It’s a really nice beer with a little acid and light funk, and delicate flavours and aromas of wildflower honey, apples and pears. We hope you like it!

(On tap @ Bar Volo, Toronto, June 26/23) Pours clear bright gold with a thin white head and no lace. Notes of lemon peel and pith, barnyard apples, delicate flowers, very soft sweetness (pear/stone fruit), gentle cereals, light to moderate funk (cellar/aged hops), some oak, a little bit of phenol, mostly on the peppery side, dry on the finish with just a little tartness. Light to medium body, moderate effervescence. This is definitely a delicate beer but it's well-balanced and honestly pretty well-made if you afford it reasonable expectations (it's definitely not lambic).
