(750ml bottle from the cidery webshop) Pours clear bright gold with rapidly dissipating white bubbles. Aroma of rich crabapple flesh, apricot, sweet grape, pale oranges, light volatile acidity, herbal barnyard-y funk profile that's a bit lambic-adjacent actually. Flavour is tart with a bittersweet edge, rather wine-like really, white grape, rich juicy crabapple, raisins, something stone fruit between apricot and yellow plum but leaning to the former as it warms, mineral but not really crisp with smooth well-integrated tannins, very light acetic acid, some citrus pith, soft balanced funk. Light body, slick, above average bottle conditioned carb. Lovely stuff, excellent complex apple cider. The shame of it is that after drinking half the bottle and putting the rest in the fridge with a champagne cork for 4 hours, it seems like it flash-oxidized to death. The rest of the bottle was trash, basically moderately lactic tart lemon-apple juice with a few bitters, no complexity, nothing at all really. Quite unfortunate, I've never had a bottle from Revel show anything like that instability with a little air, especially sealed and chilled. Rating for the initial fraction.
