Poured from 750mL bottle (lot 2020-11). Clear light blonde with minimal white head. Apple, medium dry with a feint sweetness. Nice balance.

(750ml 2019 bottle from L'Axe du Malt, Quebec City) Pours nearly clear bright gold with a reasonable white head that fades fairly fast. Notes of well-concentrated apple flesh, nice feel of cryo-concentrated juices without the sweetness, balanced astringent apple skins and fine tannins, prominent yeasty tones but more sourdough than heavy funk, white wine accents, moderate plus oak barrel, quite dry throughout and very dry on the finish with nice apple concentration, astringency and prolonged oaky notes. Medium-plus body, filling bottle conditioned carbonation. Very nice stuff, reminiscent of a hybrid between cider and cryo-concentrated apple wine as you might expect.
