C’est un assemblage de bière de fermentation spontanée 2020 et d’une bière ensemencée grâce à une levure que nous avons isolé sur du miel. Le tout a par la suite macéré avec des camerises et du myrique baumier.

Bottle: Poured a golden color ale with a medium size white foamy head with good retention and minor lacing. Aroma of funky ester with some Brett notes, some haskap notes with resinous notes and light tart notes. Taste is also a mix of funky ester with some brett notes, some haskap and resinous spiced notes with light tart notes with some oak presence also noticeable. Body is about average with good carbonation. Enjoyable wild ale with a nice level of complexity and the haskap bring good flavors.
