Corked bottle from Produits Biologiques, rue Saint Denis 179, Paris, www.parisbio.com
Deep blond color; the head disappears immediately; it’s extremely fizzy and there is a turbolent perlage. Aroma of apple skins, wood, soda, very light phenol. The mouthfeel is extremely dry, all sugar has been fermented, there is little to no trace of apples, just a light acidity vaguely lemony; it ends quite empty of any strength, with an astringent blink. Not pleasant.
