Not everything fits neatly in little boxes. This beer is part of our experimental series where we combine multiple fermentation methods. For this edition, we blended six-month-old beer that was spontaneously inoculated in our coolship and fermented in oak barrels, with three other barrel-aged beers and young, foudre-matured beer made with our native house culture. We use hyperlocal ingredients and 100% native yeast, ferment in oak, and blend to taste. Each of our products will lead you down a garden path, to beautiful places you may not have expected to go.
