This beer was fermented and aged for three months on the pressed skins of British grown Rondo grapes, kindly provided by Renegade Urban Winery (based in Walthamstow, London). The natural yeasts present on the grape skins provided new dimensions to the fermentation profile typical of our house culture. The skin contact from this maturation has produced a deep purple colour, and complex flavours of blackcurrant, sloes and cherries, with a funk forward natural wine character.

Frothy white fair fully diminishing head. Dark red colour. Light malty and hoppy aroma. Some grapenotes. Moderate acetic noce rondo (red wine) flavor. Average nice finish. Oily palate. Intersting brew with same grapes as in my garden.

Bottle from Drinkmonger. Clear ruby body with a thin off-white head. No visible carbonation. Very faint lacing. Aroma of cherry, raspberry and boiled sweets. Flavour of cranberry and bitter lemon. Thin to medium body with a smooth mouthfeel. Light fizz. This is stunning - a unique, Lambic-like beer. It’s a harmonious cross between beer and wine. Holy Goat is a fantastic and unique brewery.
