The label shows the famous "Gaifukaisei" (fine wind and clear morning) print from Hokusai's "Thirtysix Views of Mount Fuji" series. This sake has the smooth and refreshing taste and good finish typical of junmai ginjo sake, and is perfect for enjoying on a sunny day. Shirayuki Akafuji is full-bodied. The Shirayuki Akafuji, which of course also has an image of the famous and extremely photogenic Fuji volcano on the label, shows notes of white chocolate, caramel, vanilla and citrus fruit. The aftertaste is lingering and rather dry. Enjoying this drop as an aperitif or dessert wine. Serve at 10 - 50 °C. Rice type: Nihonbare. Polishing ratio (seimaibuai) (精米歩合): 60%. (My vote 6.6/10) Drank cold. The consistency of the liquid is clear and transparent. The color is a hint of yellow. The olfactory intensity is high, and the duration is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas traces impressions of vanilla, peach, coconut, honey, soy, mineral and apple for a floral and fruity aroma and a light taste. The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is slightly dry. The body is full. The taste intensity is normal, and the duration is sufficient. On the palate the body is medium. The final mouth sensations are ready to drink. On the palate impressions of cooked rice, herbs, mushrooms, gin and pineapple prevail. VARIATIONS Plus, drunk at room temperature (My vote 6.8/10) The olfactory intensity is high and lasts sufficiently. Floral nose, fruity aroma, scent of fruit, vanilla, white peach, melon, chocolate. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is slightly dry. The body is round. The gustatory intensity is normal, and the gustatory persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The finish is long, dry and clean. Hints of citrus, vanilla, almond, licorice, anise, soy, kiwi, mimosa and umami linger on the palate for a delicate aroma. VARIATIONS Plus, drunk warm (My vote 7.0/10) The olfactory intensity is normal and lasts sufficiently. The nose taste - secondary aromas finds hints of cooked rice, vanilla, coconut, apple, mushroom and honey for a fruity fragrance. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is rather dry. The body is full. The flavor intensity is high, and the persistence is good. The taste is pleasant. On the palate there are hints of vanilla, peach, apricot, gin, honey, resin, pine, spices and umami.
