A rich and well-balanced matured honjozo sake. A mature sake with notes of chestnut, maple syrup, and hay, yet remaining fresh and balanced. Despite its age, it is pleasant and easy to drink, even for those unfamiliar with Koshu sakes. It is full-bodied, moderately acidic and not too thick. Despite the richness, it is easy (2007 BY, or "brewing year," is a one-year period that begins on July 1, 2007 and end on June 30, 2008). Bottle size: 720ml.

Drank at room temperature. The liquid’s appearance is straw yellow. The olfactory intensity is high, and the duration is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas are of vanilla, almond, apricot, smoked, oak, soy, cognac, honey and dried fruit for a fruity aroma and a strong taste. The first impression of intensity in the mouth is of robust and solid sake. The body is structured not heavy. The taste intensity is high, and the taste persistence is good. On the palate the aftertaste is intense. The taste is very pleasant. The final mouth sensations are of drinkable sake. The finish is long, clean and complex. On the palate there are hints of white peach, fruit, coconut, smoked, licorice, anise, pear, green apple and white mushrooms.
