Ce cru de chouchenn est très particulier et à l’opposé de l’imaginaire concernant l’hydromel.
Le VIEUX SEC est fermenté directement en barrique suivant nos recettes et mûri en fût pendant de longs mois, souvent 24 mois minimum. Ce temps lui permet de trouver sa qualité de parfum. Les parfums du miel subsistent, mais en fin de bouche, le sucre est absent.

Très dur, surprenant, ce cru est pour amateur exigeant.

Ce chouchenn peut accompagner des crustacés, des huîtres ou surprendre en accompagnement d’un dessert très sucré, un kouing amann par exemple …

Bottle 75cl.Clear medium yellow color with virtually none head. Aroma is moderate honey, oxidid, alcoholic - sprit. Flavor is moderate to light heavy sweet with a long duration, and a dry finish. Body is medium, texture is syrupy, carbonation is flat, finish feel is light alcoholic. [20090321]

Bottle, 75cl, thx to Papsoe. A clear, yellowish mead, completely flat. Sweet and sugary nose with honey and heather, quite flowery. Honey, sugary sweetness, some papery notes, heather and other flowers and alcohol in the flavor. Medium body, warming in the mouth. A bit heavy on the sweetness, but a decent drink. (090514)

clear yellow, no head. aroma is spritty, sweet, spices. flavor is watery, citrussy, slightly spicy. not very interesting imo.

Bottle 75 cl. Courtesy of fiulijn. Clear yellow. Intense honey aroma. Light almost watery body, not much of a honey note, more like dry white wine really. Tart, alcoholic finish. 210309

Bottle, 14%. OK honey and wax aroma. Clear pale yellow colour. The flavour has a rough bitterness, with some vanilla. Clearly from being lagered on cask. Alcoholic bitterness in the finish.

75 cL bottle. Pours clear and yellow with no head. Distinct honey and herbal aroma. Dry, herbal to spiced flavoured. Rather dry. Dry, phenolic and dense alcohol in the main flavour and into the finish. Overempowering my liking.

An old style hydromel

Pale yellow color. While pouring, it spreads an intense aroma, floreal, with honey; it may also have traces of plastic; the aroma is not very strong, but very stylish. The mouthfeel as promised is very dry, no sweetness, lightly woody, less sour and pungent than a white wine but somehow reminiscent; later there is a feeling of wood, plastic and alcohol. The final is quite short, weak and lightly astringent, woody. Very difficult, but definitively interesting.

Bottled. A light golden mead. The aroma is sweet and dominated by honey and flowers. The flavor is surprising compared to the aroma, the flavor is oxidized lending it a bit of acidity combined with lighter notes of honey and flowers. I like the sweeter meads better, but this is not bad. Thanks fiulijn for sharing.
