Belgian Strong with Holy Basil, Rosemary, Bergamot + Cranberries
Impressions of: Douglas Fir, Ceylon Cinnamon, Bergamot, Aperol Spritz
Brewed in the summer when our gardens were lush with fresh herbs, this Belgian Strong was infused with a mash tun full of estate Holy Basil and Rosemary. We harvested the herbs minutes before they were introduced into the still hot wort. And in case you’re wondering, yes, “a mash tun full” is a unit of measure we use here on the farm for produce.
Once herbed, Sinterklaas headed upstairs in the barn loft to open ferment with our strain of wild-captured estate yeast from the Hope tree.
The ale then rested in oak barrels for months before conditioning atop fresh Bergamot and freshly harvested Cranberries that shipped directly to us from a small family farm in Massachusetts. Unfiltered and bottle conditioned.

12oz at the brewery pours a hazy orange, bright white head. Nose has that basil, some cinnamon, a little candy, orange peel, cranberry. Flavor has spice, anise, cinnamon, cranberry is right there, orange too, herbal like a Belgian holiday ale. Finishes nearly full bodied, a touch astringent. 7 4 7 3 13
