Open-Fermented, Mixed-Culture, Blended Grisette 4.2%

In late summer 2020, we took estate-grown wheat, along with regional barley and oats, and mashed them on a bed of hay. It was open fermented with native yeast in the barn loft above the brewhouse, overlooking the fields that provide grain, yeast, and water for this beer. After, it slowly refermented for months in French oak puncheons with brettanomyces. Finally, this Grisette was blended with select barrels from our stock to add additional layers of depth before bottle conditioning for months. These ingredients and methods embed a spicy, floral earthiness, with a whisper of fruity, tart lemon that finishes dry.

The result is an effervescent, lovely expression of our native yeast, estate grain, and agricultural region with a restrained farmhouse funk throughout.
