Rustic saison with torrified wheat and spelt, predominant spicy phenols with clove and cracked black pepper driven by the fermentation profile, subtle white wine and gooseberry, with earthy spice from a light dry hop of Saaz and Nelson Sauvin to compliment the spicy yeast character.

6oz sample is a light yellow, a little haze, tight white head. Nose has some paint and green peppercorn, opened had and had a lot of DuPont, herbal notes. Flavor has grains and starch and honey, lots of esters though, banana and clove and chewed bubblegum. Finishes estery, a touch sweet. 6 3 6 3 12
