Biotransformed IPA with Eclipse and HBC 638
Help shake some of that February dust off with this bright and zippy entry in our New Slang series of IPAs. We brewed New Slang 8 with Eclipse and HBC 638 hops, layering citrus on resin on tropical fruit. That, plus a laborious amount of hand-zested lemons, limes and oranges, gives you a vibrant IPA with a heady fruit aroma and balanced sweetness. Something to give your palate a mid-winter wake up.
A new language of yeast-driven IPA is emerging and Dageraad wants to add to the vocabulary. These IPAs are driven by new strains of yeast that can transform odorless compounds in hops and grain into vividly fruity thiols, changing understated old world hops into fruit bombs.
New Slang is a series of new IPAs where we will explore combinations of yeasts and ingredients to see what new taste experiences we can create.

Opaque. Bubbky head, pale. Fruity, has a gin character, lots of bitterness herbs. This one’s okay.

Poured from 473mL can (pkg Feb 19, 2025). Cloudy gold with small white head. Aroma of juicy grapefruit and orange citrus with mild green melon underlay and hint of lime zest. Taste has a more subdued citrusy melon hop quality with that yeasty thiol quality of the New Slang series. I like it more, on average, than other entrants in the series, but I also see they actually added orange, lemon, and lime zest in the ingredients, so question whether this style and this series should continue.

On tap at Dageraad, pours a cloudy golden yellow with a small white head. Aroma has some dankness, citrusy hops, light pine, and juicy stone fruits. Flavour is very citrusy, with bitter grapefruit peel, citrusy hops, and underripe green melon. Bitter, citrusy finish, but not the most invigorating hop expression. It’s alright.

200mL pour at the taproom. Pours murky yellow with a white head. Bright lemon citrus and fresh grass on the nose. Flavour has lots of sweet lemon sugar, some bitter pith, and fresh grass. Not bad.
