KIBOU (pronounced kee-bō) is our collaboration with OKD Kominka Brewing from Okada, Japan. Like us, they brew out of a small garage-like brewery in their town full of Kominkas, or old-style Japanese houses. Also like us, they also specialize in using local ingredients to amp up their beers like their plum saison. The beer came out awesome. Tart fruit on tart fruit, the lilikoi jumps out first with a candy-like aroma but the mid-palate and finish are pure yuzu citrus pith and zestyness. More tart than our other sours but this needed it to let the fruit shine.
The name Kibou means “Hope”. They wanted to call the beer that because this trip filled them with hope that they get to make more beer like the ones they tasted here.

Light tart palate, excellent yuzu and lilikoi. Modest sweetness. Good balance. Slightly simple, but good
