Windfall 2024 was made during the harvest of 2021 by blending 50% direct press apple juice by in-house sweated organic windfall apples from Moonacres Farm with 50% fresh ale made with organic red wheat and organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW.
This blended liquid was laid to rest in a single puncheon for nearly two years before it was removed and aged on the pressed wild-growing apple skins from the making of Roadcider 2023: Southern Highlands. The process resulted in a significant loss of the original beer but increased the structure of this drink dramatically before bottling.
It was allowed to naturally condition and carbonate in bottle before release. Made exclusively for The Collective.
The label for Windfall 2024 was made by Topher's wife Bernadette by painting in watercolour with apple cider vinegar made from the direct press apple juice in 2021.

Cloudy white golden color. Super funky nose with excellent wild yeast, apples, apple skins, barnyard, very tart and sour. Very light good acidity and band aid. Superbly balance. One of the best beer ciders I’ve ever had.

Thanks TimE for sharing the bottle! Lightly turbid pale gold with half a finger of clean white foam.
The nose shows intense notes of barnyard with hints of brett.
The palate is extremely carbonated and light bodied with moderate acetic edge. Moderately tart with moderate flavors of barnyard and light but noticeable savory notes of bacon.
