Tears of Saint Laurent is very special to us. To produce this beer we used our vintner’s practice for the first time. Moreover we add grapes from our own vineyards into this beer. Vineyards mean a lot. We work there during the whole year to harvest the best quality. Aroma and taste of the grapes (known for plum or plum jam tones) is developing very well thanks to southwest orientation and limestone riff beneath. Saint Laurent variety is very old and traditional. It is so old that the scientists were not able to trace the origin. The variety came into being as spontaneous crossbreed of Pinot Noir with some unknown variety most probably.
We use pale malts and unmated wheat when brew the base beer. In the open vessel we inoculate the wort and pump it into barrels afterwards. It is spontaneously fermented beer aged for months (sometimes more than a year). We do not use lab-derived yeast; just 100% local microflora. Beer is aged till autumn. Wine harvest is done manually; it is the most sensitive way for the vineyard. Before we add it into the beer we remove the stems. Now the beer is fermenting and aged for months again.
Thanks to spontaneous fermentation and using traditional vintner processes, the taste is rich. You can discover new layers with every other sip.
We recommend Tears of Saint Laurent for all skilled sour beer lovers. This speciality can be produced only right after the wine harvest.

Bottle from Pivný raj Czech brewery no.121 Pours headless reddish. Some black currant on nose. Tastes sourish, black currant, grapes, sticky texture on background. Very nice I would say.

0,33 flaske delt med skibsrederen og skogsmatrosen på Holmens siste aktivitetsdag i 2018: vakker kirsebærfarge så og si uten skum. Kirsebær, moreller, plommer, røde epler og rips. En real frukthage i et glass. Etter hvert kjenner jeg et tydelig preg av gymbag/sure sokker i aromaen, men uten at det går ut over smaken.

Bottle shared with JMD and JFE at HNB 29.12.18. Translucent deep ruby. Small head. Excellent aroma and taste of dry and sour cherries, plums and gastric acid. Very dry and astringent.

Bottle shared by Marcus. Pours a light red wine color with a transient white head. Mild sourish aroma, possibly with a tinge of vinegar, and some red berry fruit. Approaching med body. Flavor is quite red berry, mildly sour, very dry. Gets a little earthy in the finish. Very tasty, refreshing and pleasing.

Bottle shared at Crafty. Deep purple color white coca cola head. Aroma of red wine. Taste has lots of fruit but minimal sourness and no funk. Barman thought is was non-alcoholic when he tasted it. A+ for the idea, but needs work.

Bottle 0.75l. Clear, red colored. AROMA- funky, wild yeast, grapes, wine, strong leather tones. FLAVOR- dry, strongly sour, no bitterness, sharp, red wine, sour cherries. Light to medium bodied.

At a tasting, many thanks, very little head, light cloudy lightish red color, aroma of wood and vanila, red wine vinegar and some funk, flavor of red fruits, vanila and a bit of spice, quite tart but mellow and nicely balanced. Really good and enjoyable.

Bottle sample at a tasting at Max's place. Thanks zvsn. Nice red color. Great aroma of barnyard, red fruits, lacto, oak. Sour flavor, juicy, funky, red fruits, lemony. Medium-bodied, strong carbonation. Great stuff.
