定番シリーズの第2弾(7つ目の仕込み):2弾目の定番リリースはベルジャンIPAです。お客様にいただいた「西海岸の想い」に関するフィードバックを参考にしながらレシピを少し変更し、ホップバランスをさらに追及しました。付けた名前は、「一意専心」。

クラフトビール業界は熱心な人で溢れている。ブルワーはもちろんだけど、職種を問わずビールのために一生懸命(そして楽しく)働く人が多い。よく考えたら、同様のことの言える業界はあまり思い当たらない。「一意専心」はこの業界の精神をうまく表現していると思う。

このビールは京都醸造が最も尊敬する醸造大国のベルギーとアメリカの特徴をブレンドしたものだ。アメリカのクラフトビールはホップの味わいと苦味でよく知られている。ベルギービールの複雑な味わいはほとんど酵母からくる。「一意専心」は華やかな柑橘系ホップ感とスパイシーな酵母感を組み合わせてドライで苦すぎないIPAに仕上がった。

This week, for our 7th batch, we are releasing our second 'teiban' (year round) series beer. We took the recipe of Nishikaigan no Omoi ('Memories of the West Coast') and rejigged it slightly for hop and finish balance. We called the re-made teiban version "Ichii Senshin" (literally one mind purposeful). It is a Japanese idiom that is often translated as "single-minded dedication," stressing the need to focus on one thing and do it very well.

One of the most inspiring things about the craft beer industry is the dedication and devotion its members show their products. While this is an obvious necessity on the part of the brewer, you see it when interacting with people in this industry no matter what their job: tour guide, accountant, sales rep, bar staff. Its hard to think of too many other industries where this is the case, so when we came across the Japanese idiom Ichii Senshin, we thought it perfectly described the way these people approach their craft.

This beer brings together the best aspects from our two favourite brewing traditions: America and Belgium. Craft beer in America has sparked a reawakening of beer lovers across the world, mainly driven by bold and bitter hop flavours. Belgium has always produced beers of amazing depth and complexity thanks in large part to the unique character of its yeast. For Ichii Senshin, using these two ingredients together creates a Belgian IPA that blends fruity and citrusy hop character with earthy and spicy yeast flavours without being overly bitter.

Golden amber color. Frothy white head. Huge Belgian yeast in the nose with good, but not too aggressive hoppy character. Lovely rendition of a Belgian IPA. The mouth is very well balanced with big yeasty finish and decent fruity character. This is a schooling on new world Belgian IPA, a style I don’t particularly care for.

Re-rate: Tap at Nakameguro taproom. Belgian yeast funky nose with some pineapple, wheat citrus. Bitter on the palate with lots of citrus zest. Active carbonation with a medium to medium-light body. Bitter and zesty finish. Crisp and dry. Nice. Draft at Craft Beer Forrest. Deep gold with a beautiful soapy head. Nose is very grassy with some citrus and grain that stands out. Taste has some light funk and some wheat character. Citrus and grain with a slight spicy finish. Take out from Bungalow. This Belgian IPA is Kyoto Brewing’s 2nd Core Beer (teiban) and pours an opaque gold with a fluffy head of white creamy foam. The nose is soft citrus, light(wheat?) malts and spice. Round carbonation and a fairly soft mouthfeel. The initial is fruit, the spice then a metallic tea like bitterness. Not really my cup of tea at first but it grew on me and by the time I finished the glass I was sad it was all gone.

Tap at Bungalow. Grassy, herbal hop nose, really grassy fresh dry hopping, leafy. Cloudy deep gold with orange tints. Great hops, soft mouth, some biscuits. Really leafy. Smooth, full bitterness. Great.
