定番シリーズの第2弾(7つ目の仕込み):2弾目の定番リリースはベルジャンIPAです。お客様にいただいた「西海岸の想い」に関するフィードバックを参考にしながらレシピを少し変更し、ホップバランスをさらに追及しました。付けた名前は、「一意専心」。
クラフトビール業界は熱心な人で溢れている。ブルワーはもちろんだけど、職種を問わずビールのために一生懸命(そして楽しく)働く人が多い。よく考えたら、同様のことの言える業界はあまり思い当たらない。「一意専心」はこの業界の精神をうまく表現していると思う。
このビールは京都醸造が最も尊敬する醸造大国のベルギーとアメリカの特徴をブレンドしたものだ。アメリカのクラフトビールはホップの味わいと苦味でよく知られている。ベルギービールの複雑な味わいはほとんど酵母からくる。「一意専心」は華やかな柑橘系ホップ感とスパイシーな酵母感を組み合わせてドライで苦すぎないIPAに仕上がった。
This week, for our 7th batch, we are releasing our second 'teiban' (year round) series beer. We took the recipe of Nishikaigan no Omoi ('Memories of the West Coast') and rejigged it slightly for hop and finish balance. We called the re-made teiban version "Ichii Senshin" (literally one mind purposeful). It is a Japanese idiom that is often translated as "single-minded dedication," stressing the need to focus on one thing and do it very well.
One of the most inspiring things about the craft beer industry is the dedication and devotion its members show their products. While this is an obvious necessity on the part of the brewer, you see it when interacting with people in this industry no matter what their job: tour guide, accountant, sales rep, bar staff. Its hard to think of too many other industries where this is the case, so when we came across the Japanese idiom Ichii Senshin, we thought it perfectly described the way these people approach their craft.
This beer brings together the best aspects from our two favourite brewing traditions: America and Belgium. Craft beer in America has sparked a reawakening of beer lovers across the world, mainly driven by bold and bitter hop flavours. Belgium has always produced beers of amazing depth and complexity thanks in large part to the unique character of its yeast. For Ichii Senshin, using these two ingredients together creates a Belgian IPA that blends fruity and citrusy hop character with earthy and spicy yeast flavours without being overly bitter.

Tap at Gremlin. Nice. Lemon, soapy, quite bitter, pine and grass along with the lemon in the aroma. Full on grainy wheatiness. Something herbal. Few months later, great, juicy, fruity, taste explosion. Great stuff. Some wheatiness in the background but this version is awesome. Not even first beer over marking syndrome. Great!

Draft at Hopseed, Kyoto. Fairly hazy golden with a white head. Aroma of yeast, citrus, light fruits and herbal notes. Flavour is moderate sweet and bitter. Medium bodied with light carbonation.

Tap at the Hop Seed, Kyoto. Poured a hazy golden colour with a thin broken white head and some broken lace. The aroma is big malt, super yeasty, cheesy, floral hop. The flavour is moderate bitter, with a light, crisp, yeasty, light citrus, hop bitter palate and a lingering bitter finish. Medium bodied with average carbonation.

Tap. Nice golden pour with some white foam on top. Nose is clearly Belgian, yeasty spices, also lots of herbal character there. Nice hop tingle provides a hint of some generous hopping. Medium-light body, drinks very easy. Good example of IPA in Belgian style.

Draft @ BBP Good Beer Feast 2016. Dorée sur léger voile, col blanc. Arôem a!u nez citronné, vert, caractère effluves nobles, rétro vert et herbacé. Retrouve une fois de plus une base levure belge qui ne me semble pas tjrs au mieux pour mettre en avant des houblons plutôt US. Palais est plaisant avec une ouverture levure belge bien marquée. Le tout est complété par un houblonnage moyen, oscillant entre noble et un peu US, type C avec pas mal d’agrumes - pamplemousse mais un peu en retrait.

On tap at Ant ’n’ Bee, Tokyo. Pours clear golden, white head. Hoppy, fruity, citrus, some yeasty notes. Quite smooth. Lasting bitterness. Medium bodied. Very nice and balanced.

Poured from the tap at Len’s. Light yellow with a slight orange hue and near white head. Grassy hops with light yeast, mildly dry finish, light creamy texture, flavour dissipates a bit at the end though.
