Due to its authenticity, Earthmonk received as little sugar as possible during bottle conditioning in order to preserve all original aromas and flavours. This beer comes with little carbonation and a mini head. Is best served at cellar temperature and poured generously, meaning from a hight of approximately 15 to 20 CM, in an upright standing tulip glass. A big bubbled head will quickly make place for the Earthmonk coming alive!

Pours a cloudy brown with dark ruby highlights when held close to the light. No head whatsoever even when coaxed while pouring. Smells of sour cherries, prunes, slight fusel alcohol in the background and maybe some phenolic in there as well. Tastes incredible! Lots of sour cherries, but not over the top lactic like some others. A bit of caramel malt midway through, some more sour then a bit of alcohol then some more sour leaving a slight puckering in the finish. Vinous flavors throughout. Medium in body with a sticky mouth. Carbonation is just about non existent, still almost. This might need some age to develop some carbonation. I do have time as the bottle says it is best before 7/2011. Great brew, I wish it was more readily available.

33cl bottle. Batch 1. Pours a translucent, copper brown with some spitty, beige head. Nice nose, dates, prunes, figs, wine, lightly woody, earthy, tart. Flavor is sweet, tart, apples, vinegar, pears, figs, red grapes, cherries. Full bodied, tart, vinegar finish.*********Re-rate from February 2011. 33cl bottle at Kulminator. Pours an opaque deep brown with a thin, clumpy white head. Nose is prunes, brown sugar, medicinal, pears, a touch of chocolate, some fruit, candy. Flavor is sweet, prunes, raisins, apples, pears, light molasses, almost a corn syrup sweetness, sweet. Full bodied, smooth finish. Really easy to drink.

Bottle. Pours plum black. Nose has strong vinous notes with some wood and tart fruit in the background. Taste is interesting. Almost a chocolately body with lots of vinous notes, wood and slightly tart fruit.

(Bottle, 0.75 l - BBE 2011 - at Pikkulintu) The beer poured deep dark brown and cloudy. Its head was small and white. Aroma had balsamico, malts and sourness. Palate was medium bodied and dry with medium carbonation. Flavours were sourness, rowan berries, malts, red currant and balsamico. Aftertaste had sourness and berries. Despite this beer had all the signs that usually refer to brewing errors the combination was excellent.

75 cl bottle shared at the RBSG grand tasting. Very vinegary, acetic aroma, lactic, yogurt. Sweet-and-sour flavor with a lot of vinegar, a lot of yogurt. Interesting, but maybe not in the best shape it could be. I was really glad I got to try this, those. Thanks for bringing it!

6th March 2010. Clear dark brown beer. Semi dry crisp palate. Can never drink this without thinking off Duchesse Du Bourgogne. But here the sourness is a little sharper and it also has a more medicinal note.

Bottle, 75cl with wine cork and crown cork. It pours a reddish dark brown body with small, rocky beige head. The aroma is vinegary, with sourness and oak. Lovely balanced. The same can be said of the flavor, there’s a slightly roasted touch in addition to a vinous, vinegar-like flavor. Quite astringent, smooth and medium-bodied. Vinous, vinegar-like finish. A lovely and very mellow beer. Hard to describe without using the work lovely. 091230

Bottle. Dark amber colour with an off-white head. Aroma is sour, acidic, fruit, oak. Flavour is acidic, sour, berries, earth, vineous, oak, coffee, fruit. Weird and lovelly beer.

Bottle at Kulminator. Caramel/malt whisky aroma. Dark brown color with minimal head. Sweet-sour cherry flavor with a dry/tart/astingent finish. Slight burn in the after-taste. Very nice with the Struise unique touch.

I got this bottle from the most generous Carlo (Lachesis); I was waiting for the right moment, and the years passed
The color is brown, very dark, almost black; large beige head, persistent. The aroma is pungent, there is vinegar and acetone; behind, quite hidden, also some caramel and light fruit. The carbonation is still high, so the beer has been working in the bottle; it has a quite strong body, with good caramel flavor and also enough sweetness; the sourness is aggressive, playing with the acetone notes; there is also a touch of liquorice (probably due to the age); it gets close to a balsamic vinegar.
Very well conceived, but the acetone and liquorice are disturbing the senses.
