Evenstar is a special blend of our Belgian-style Quad soured in Cabernet Sauvignon and bourbon barrels. It pours a deep mahogany in color with a subtle off white head.

Reviewed from notes.
Can to chalice.
Appearance: dark amber color with a quarter finger of white foamy head which dissipated nicely to leave some light lace
Aroma: bourbon barrel-ish tones over top of some nutty to caramel character; light grape notes and other muddled dark fruits, subtle acidic/vinous/sour edges
Flavor: meshes the previously noted aromas to a fine sour to sweet quality; finishes somewhat woody, caramel and dark fruity
Texture: medium bodied, this is a sipper; some smoothness but also some vinous aggression to the tongue
Overall: though I'm not really a wine drinker I liked the fact that the bourbon seemed more pronounced so I believe I could come back to this.

Undated can drunk 4/18/25.
Clear, medium-to-darker-amber/chestnut. Small, dark beige head, moderately-low retention.
Get the bourbon and I definitely get the red wine. Moderate acidity, though nothing aggressive, at least in the nose. Good buttery oakiness, light caramel and lots of fruitiness. Not boozey. A bit vague in the nose, though; hard to get at much personality.
Rich and malty with brown sugar, caramel, cherry and raisin. Wow, this is quite complex and flavorful despite the rather reserved nose. Rich malts but drying out nicely on the finish with plentiful red wine, oak and light bourbon and good attenuation. Not acetic-driven and I daresay, there's virtually none here. Soft, rich, flavorful, balanced, not too acidic....

Can at home. It only says sour in small letters on side of can but I was warned by clerk who’s fine gentleman. Rich ruby pour and some head. Nose is rich fruits, wine grapes, some wood. Tatses of raspberry, Cabernet, wine residue. Lemon. Balsamic, cherry. Puckering tannins. Hint of bourbon sweetness at end paired with fruits.
