Process : Pale wheat beer spontaneously fermented and aged for 8 months in a single 400 litre French oak barrel. The beer was moved onto Pinot Meunier grape pomace (stems, seeds, skins) in tank and punched down daily until referementation had calmed (around 2 weeks). The beer was on fruit for 6 weeks before packaging. The grape pomace was given to us by Daniel Ham from Offbeat Wines.
Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side. This beer has conditioned for over 6 months on date of release.
Ingredients: Malted barley (pilsner), malted wheat, raw wheat, aged hops (whole leaf fuggles & whole leaf strisselspalt), pinot meunier grape pomace, water.

Packaging: 75cl champagne bottle, cork, cage
ABV: 7.1%
Bottled: 12/20

Bottle at the blendery. A clear pinkish gold coloured pour with a lasting pinkish white head. Aroma is semi sweet, jammy raspberry, schloer, mineral dry funk, light flint. Flavour is composed of apricot. Flavour is composed of semi sweet, light funk, vinous funk, mineral, grape. Palate is semi sweet, to drying finish, fine prickly carbonation. Lingering pale fruit notes.
