With Knox is the next release in our series where we have our friends into our barrel room and let them meander through the barrels, selecting their own blend, from our own barrels. When Brad from Xul and Joe and Jesse from Abridged were in town, we spent the good part of the day in the barrel room, pulling samples, talking adjuncts, and finding a blend that would represent them. The final blend is 50% Vibes recipe aged in 1792 barrels for 23 months, 25% Vibes recipe aged in a Willett Family Estate 7 year bourbon barrel for 22 months and 25% Horchata recipe aged in a Willett Family Estate 9 year bourbon barrel for 17 months. After blending, we thoughtfully rested the blend on Vanilla Beans from Uganda and Cook Island, Toasted and Untoasted Coconut Flakes and Cocoa Nibs from Ghana.
