Yeast YF-203
Hops: Magnum
A mixed fermentation wild sour. Primary fermentation went on the yeast listed above, but the wild part continued later on in a wooden barrel made from Croatian oak. We added wild plums (amula in Croatian) during the barrel fermentation. We've used the same barrels several times now, tannins are mostly depleted, but the wild microorganisms well multiplied. Expect a moderately strong acidity with a fruity character, as well as some background marmalade like sweetness from the plums.

Bottled 375ml. -at Goblet Zagreb. Orangeish coloured, no head at all, funky and light fruity nose. Strong sour fruity and light plum taste with moderate to strong carbonation. Light peachy and quite dry finish.

Tap at PBF. Lots of funk, pretty clean feeling barnyard though, not much wood, but I do not get tge fruit either. Rather basic, but easy drinking, good.

Tap at Prague Beer Fest 2025. Debut! Murky pinkish ochre, similar head. Smooth light plum, sour touches, mild mild funk. Dry, sour taste, low fruity notes, creamy, still quite youngish, kinda works anyway. Good stuff!
