An American style pale ale infused with beans from Darkstar coffee.
This particular coffee from Mormora plantation in the Guji zone of Sidamo is dry processed – which means the picked, ripe cherries are fermented in the sun and then the pulp is removed from the seed without the use of water, creating berry-fruit flavours. Combining this with the aromatics of Citra and Centennial hops, knuckles is the perfect harmony between coffee and beer.

Tap at the Boilermaker House, Melbourne. Poured a light amber with a thin broken white head. The aroma is dry grassy citrus hop, some light coffee. The flavour is moderate bitter with a light grassy floral, light dry coffee, light spice palate. Medium bodied with average carbonation.

Hazy pale, thick head, aroma is light coffee and mellow citrusy hop, lots of citrus and bitterness, quite a bit of coffee, too, and it makes sense, even though clearly it shouldn’t.

On tap at Royston Hotel, Melbourne. Coffee is apparent on the nose. Pours pale and slightly cloudy. Clean mouthfeel. Coffee emerges as beer warms, eventually overwhelming the more citrus hop profile. I struggled to get all the way through the glass as wet coffee notes really started to punch through. Nice effort though.
