Whiskey Barrel Aged Smoked Doppelbock
We took our “Darkness Ablaze” and gave it a long, cold rest in freshly emptied third use whiskey barrels that previously held our “Dark Room #1: A Blend of Whisky Barrel Aged Imperial Stouts”. Expect aromas and flavours of dark fruit and caramelized nuts with a gentle kiss of smoke.

Aroma: caramel malt, some dark fruits, and a bit of smoke.
Taste: along the same lines, noticeably bitter, couldn't find the barrel-aging evidence.
Overall: still quite pleasant.

Amber-brown with a thick head. Lots of smoke on the nose. Rich malty character, smoke just rolling through the palate. Not actually getting any whiskey…though these are third use barrels. Maybe the stout comes through a touch. Still, I like the base and I’m here for variants. The barrels must have rounded things out because I appreciated a bit more richness and balance here than in the base.

Poured from the tap @ Luppolo (side by side with Darkness Ablaze). Clear-ish amber brown with small beige head. The whiskey overlay gives it some nice vanilla character, but mutes the original Darkness Ablaze character. Actually prefer the original, non-whiskey version.

On tap at Luppolo, pours a dark amber brown with a small beige head. Aroma has plenty of dark dried fruits, toasted caramel, gentle smoke, and subtle whiskey barrels quell in good cohesion. Flavour is more subdued on the smoke than the base beer, replaced with the whiskey barrels, and supported by a relatively dry caramel malt base, along with dark dried fruits. Very skillfully done.

6oz pour at the brewery. Pours murky brown with a light beige head. Whiskey and smoked malts on the nose. Flavour has great earthy, smoky base complemented very well by the whiskey barrels. The smokiness of the base beer is more subdued than it was in the original, but the synergy of the base and barrels is excellent.
