Doom Forge VII – 2025 Imperial Coffee Stout
From the darkest depths of our brewhouse, where the forge glows red-hot and the hammer strikes true, emerges Doom Forge VII—a colossal Imperial Coffee Stout built for those who embrace the abyss.
We constructed this beast on a foundation of English Maris Otter malt, reinforced with an onslaught of chocolate and caramel malts from Simpsons Malt in the UK. Rich, deep, and layered, the malt backbone is a testament to the craftsmanship and patience that define our brewing philosophy.
But the soul of Doom Forge lies in the coffee. Sourced in collaboration with Figure 8 Coffee Purveyors in Austin, we selected a single-origin Ethiopian coffee that transcends the ordinary—Niguise Nara. Grown in the fertile highlands and put through a 56-hour anaerobic fermentation, this coffee unlocks an electrifying complexity. Notes of strawberry ice cream, jasmine, lime, and floral sweetness weave through the stout’s dense, roasted malt character, finishing with a creamy lactic richness that pushes this beer into new territory.
This isn’t just a beer—it’s a statement. A tribute to craft, intensity, and the unrelenting pursuit of something bigger, bolder, and darker.

Dark, clear. Big tan head.
Dark roast coffee, dates, brown sugar and milk chocolate. Not boozey or over roasted.
Rich and chocolatey. I'm not a huge coffee stout guy but this is a hell of a base beer. Rich and malty without too much roasted bitterness. Lingering fruity and bitter coffee. Vanilla, milk chocolate and no alcohol. Drinkable!
