The sap of the birch tree is often used to make lemonade, but Oud Beersel chose to use the bark. This macerated for about four weeks on two-year-old Lambic and the result is deliciously herbaceous, with light hints of wood and a pleasant aftertaste.

MBCC 2025, Red Session. A slightly hazy golden beer. Aroma of sour white grapes, some herbs. Taste of herbs, sour grapes and apples.

MBCC. Hazy golden with a small white head. Aroma is sweet, malty, barnyard and wood. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 240525

Draught Rather disparate, if reasonably stalbe transparant to white head, over orange to ochre beer, opaque. Old wet wood, oak, horseblanket, farmyard, bit of sulphur, very dried orange peel. Sun-dried mud. Ultra dry, bit of chewing gum, lemon, horseblanket. Sour celeri, if that makes sense; lettuce with lemon vinaigrette. Dry wood and lots of tannins. Light acidthinning, ultra tart. Excellent, another one that just blends well, and extremely drinkable at that. NB the use of birch bark baffles me, however, since we always learnt that our farthest ancestors drew a kind of tarr out of birch bark...
