The sap of the birch tree is often used to make lemonade, but Oud Beersel chose to use the bark. This macerated for about four weeks on two-year-old Lambic and the result is deliciously herbaceous, with light hints of wood and a pleasant aftertaste.

Superficial sample from Billie’s craft beer fest 2025. Unclear golden body with practically no head. Aroma like classic funky Oud Beersel. Taste is a bit less acidic than the classic, I think. Not noticing the bark ting really but it’s sure a damn fine lambic. And then I remember the fact that this is a lambic and nor Geuze. This is a nice lambic and as a lambic they use to be a lot less acidic than Geuze etc. etc. Anyway, a very nice brew that I will like to repeat one day with more focus on the tasting than running around from brewery to brewery trying to taste as much as possible before they run out of beer.

Tap at Billies. Almost clear golden. Deep deep funk. Soft caramel, oak, light floral, vanilla, a bit herbal. Hard to describe how the birch works here, but very subtle and pleasant. Medium sour. Flat. I really like it.

Süß säuerlicher Start, cremig, hohe Süffigkeit. Spritzig, moderat herb, die Säure bleibt mild, OK. 9/7/8/7//7

On tap, at Billie's Craft Beer Festival. A nice beer indeed, but felt a bit dull I think. Funky, fruity and tart, with a herbal hint I guess comes from the birch bark. Lightly woody. Guess this one was a bit too subtle for a big tasting session like this festival is. But nice indeed. 747414 251107

Low carbo, thin body. Med sourness, restrained. Light acetic only. Medium birch bark presence, mixes well with medium funk. Good one, altho could use more complexity and some bubbles.

Tap @MBCC 2025, Red Session. Cloudy golden white head. Funky, fruity aroma. Funky barn flavour, citric. Bark??? Why?

Pours unclear, darker blonde/amber. Scent is very intense, tannix-like woody bite, mellow lambic funk underneath. Taste is quite outspoken, yet mellow and soft. Woodyness is bit tannic, but also has some vanilla (sort off), herbal/spicy notes, complex to describe, but very aromatic. Lambic isn't lost, but does take the backseat, as the wood has been given a lot of room to shine. Very dry. Quite nice !

On tap at MBCC 2025 (Red session), pours a hazy golden orange, tiny head. Aroma is full of musty armpits and some leather. Flavour has lots of dry leather, armpits, and earthiness. Not getting the birch bark. Decent flat lambic.

On tap at MBCC 2025, red session. Pours murky gold. Old wood, mildew, birch bark on the nose. Flavour has tart old leather, mildew, and bit woody. Nice.
