For this Druif, we macerated a variety of muscat grapes from Domaine Christian Binner in Ammerschwihr, Alsace, France. The grapes were picked on the beautiful terroir below the Kaefferkopf Grand Cru and consist of both 80% Muscat d’Alsace Blanc (or Muscat à Petits Grains), 15% Muscat Ottonel and 5% Muscat d’Alsace Rose. These fine grapes macerated for almost three months on an ex red wine oak barrel. We used one- and two-year lambic, originating from three different barrels and nine different brews. All of the cereals were sourced in Pajottenland. The final fruit proportion is 356 grams of grapes per litre of finished Druif. 100% 3 Fonteinen.

750mL bottle at Moeder Lambic Fontainas, pours a hazy golden, not much head. Aroma has plenty of dry wine grape skins, moderate funk, and a touch of perfumey character. Flavour follows accordingly, with lots of white wine grape skins, a floral grape character, and gentle funk. There’s quite a pungent perfumey, almost alcoholic grape character on the finish. Great but not my favourite 3F Druif. Very good.
