1, 2 and 3 year old lambic with a small variety of Spanish plums.
In 2022 we tasted a small beautiful plum from Spain, the parfume and taste was heaven on earth. In 2024 we had the opportunity to have a small amount of plums again. This year we blended the plums with a small amount of black muscat lambic that aged one year on a Bordeaux barrel.

2024 bottle @MBCC 2025, Red Session. Clear red, light pink head. Raspberry and strawberry aroma. Sourish berry flavour, some citrusy acidity.

Bottle pour at MBCC 2025 (Red session), pours a cloudy dark, hazed pinkish red with a small pink-tinged head. Aroma is full of tart plums, soft floral notes, and gentle funk. Flavour is dry and yet very fruity, with tons of dry, tart, jammy plums, moderate funk, and a bone dry finish. Really nice blend and infusion of plums. Excellent.

Bottle pour at MBCC 2025, red session. Pours murky red with a pink head. Fruity cherries, must, old wood on the mose. Flavour has musty cherries, tannic skins, must, mildew. Fantastic.
