Inspired by the British Stock Ales of old, this beer was brewed entirely with British malts and hops and spent over a year with brett and bacteria in our old Islay barrel. Its malty and peaty intensity is balanced by a vinous and complex funky sourness, making it a perfect beer to sip at the end of a meal.

Bottle from Le Soupir pack 2025. Color: Lightly hazy amber, off-white head. Aroma: Malty, Brett, hints of peat. Taste: Mix of peat, leathery Brett, malt, some oak wood, hints of floral hop and dark dried fruit. Light to moderate tartness and light sweetness. Nice one, personally I prefer this one above the (more complex) red grape macerated version (Part Two).
