In the Trappist tradition of brewing, each beer is not given a specific name, but a number. That number is reminiscent of an old measurement of original gravity, usually 8, 10, and 12. The monks typically only drink Patersbier at their meals: a low alcohol beer with a low starting gravity. Our Patersbier style ale is named 5.5, or “V.V” as a nod to that tradition, and the 0.5 means we’ve added a bit extra. We locally sourced the most succulent and juicy Asian Pears we have ever tasted, and our good friends and Tea experts at The Spice And Tea Exchange down the street helped us select two amazing Chinese teas. First is a high altitude-grown Green Tea called Jade Cloud, with notes of chestnuts, and second is a minimally fermented Oolong known for its creamy and silky texture, earning its name, Milk Oolong.
Fermented with our favorite Trappist style yeast, this beer bursts with bright and perfectly ripe pear, finishes creamy in texture but fully fermented to dryness, with fruitiness and light tannin from the tea. A truly unique take on this style with layers of delicate nuance.

7 oz pour shared at Novemberfest. Clear yellow with off-white head. Aromas of citrus, hair salon perm. Tastes of citrus, floral, spice, herbs. Light body with a dry finish.
