I originally brewed this beer in 2005 as a "light beer" for those that hadn't yet acquired a taste for bold craft beers.

Eventually some of my Mexican employees and customers added lime, claiming it tasted "just like the beers we drink in Mexico".

At their suggestion, I rebranded it as Cabeza de Vaca, served with lime, and it became even more popular.

Most of our food recipes include subtle Mexican influences, such as red pepper to complement black pepper and lime juice to lower sodium content - so this beer always pairs well with a meal at Strip's!

Sandhills Brewing in Mission follows my original recipe to create this beer exclusively for Strip's that tastes great with or without a lime!

Shaker pint draft at Strip's Chicken & Brewing in Lenexa, Kansas. The pour is a clear golden with a minimal head. There are a bunch of fine carbonation bubbles rising to the surface. The aroma is cereal grain and lime citrus. The taste is the cereal grain, clean golden ale flavor, lime citrus and the slightest hint of earth mineral. The palate is light bodied with active carbonation and the mineral lime citrus finish. Easy drinking, nice take on a Mexican Lager.
