THE TROPICAL AND PINEY SIMCOE IS THE STAR OF THIS FRUITY WONDER OF AN IPA

[Character]
This pale, dry West Coast-style IPA has Simcoe as the star of the show, bringing an array of hop flavours, from citrus, tropical fruits, and a resinous pine character.

[Naming]
If IPAs were considered to be a show, there's no denying that the star of it is the hops. Normally it's more like a blend - a band - of multiple hops performing together. For this series, however, it's a solo artist - a "Hop Idol", if you will, showcasing their individual talents on the big stage. Who would you vote for?
[Brewer's Voice]
We love Simcoe. We are fans of not only its fantastic flavour and character, but also its versatility. The character of this hop can change depending on how you use it. You can get pineapple, resinous pine, floral notes, citrus, grapefruit, earthy, and berry flavors. It plays well with many other hops and yeast varieties as well. To showcase Simcoe in a beer, we leaned into its pineapple and pine resin character since this blend is one of the more unique elements to Simcoe, and they are also flavours that we really like in West Coast style IPAs. This beer is all pilsner malt, using some dextrin malt for body. We kept the Simcoe addition in the boil on the lighter side, favouring whirlpool and dry hop additions for their wonderful aroma impact. We fermented this beer out with a co-pitch of two different yeast strains. With this combination of yeast, we were looking to get a clean dry finish while bringing out some more of that pineapple flavour through yeast esters. We didn't just go for any old Simcoe either. We picked a blend of Simcoe from 4 different lots with one of them being Cryo T-45 hops, which we used in the dry hop. This beer does a great job showcasing Simcoe and its talents. KBC Hop Idol Simcoe IPA 7%

Matte gold with thick white foam and a woodsy slightly dank hop bouquet. The taste is fairly resinous but it’s quite a solid brew.

Can. Pours a bright pastel yellow, cloudy, with a medium head. Nice Simcoe nose, spicy, citrus, floral, with honey malts. Sweet honey and biscuit flavor, spicy, minerally, lemon. Soft palate. Good show of Simcoe.
