Orchard Behavior is a collaboration with our dear friend Nate Waters from Keepsake Cidery in Dundas Minnesota. Nate brought us a blend of his fresh pressed estate grown raw apple cider in the the fall of 2019. That raw juice fermented with our daydreaming saison wort for 2 seasons in neutral oak barrels. We bottled the blend of 2 barrels the following spring. The interaction between our daydreaming culture and his wild cider created a beautiful melange of gentle acidity backed by a spiced rustic apple tartlet character while slowly developing in the bottle. Enjoy this cider/saison hybrid reliving your childhood watching your kids chase firefly's.

On tap at MBCC 2025 (Yellow session), pours a hazy pale golden with a small white head. Aroma has rustic saison yeast, light barnyard notes, and bay. Flavour is messed up, with some weird acetone, farmhouse notes, and hay. Weird yeast profile—something went wrong here. Not good.

Bottle pour at MBCC 2025, yellow session. Pours hazy yellow. Tannic apple skins and funk on the nose. Flavour has slightly tannic apple skins, some funk, off-dry. Pretty good.
