A blend of Danish Wild Ales aged in Amarone barrels for 8 months brewed with fresh and locally grown Opal plums from a biodynamic farm in Slangerup, DK.
A blend of Danish Wild Ales aged in Amarone barrels for 8 months was selected to pair with amazingly fresh and locally grown Opal plums from our good friend and biodynamic farmer Verner, located in Slangerup just outside of Copenhagen.
We only make Opal on years where the vintage is exceptional, and 2020 was a fantastic year for plums at Verner's farm.
The Amarone barrels pair perfectly with the flavour of sun kissed plums, low in acidity and high in aroma and flavour, Opal 2020 is sure to be a crowd-pleaser!

Sampled at Borefts Pre-Tasting. Darker orangy color, small to average sized off-white head. Smell and taste remind me of a Flemish red-brown. Tart, maybe tart red fruit notes. Hmm not my thing. Very dry. 5-3-5-3-9

Ballers Tuesday, Ratebeer Odense, Autumn 2019. Cloudy pale red with a lasting white head. Aroma of plums, wood, walnut and funk. Dry and tart fruity flavour with lots of plum.

Bottle shared at the pre-Borefts 2019 tasting, Zaandam. Poured a hazy medium amber with a thin white head. The aroma is grainy, mineral, earthy, light red berry fruits. The flavour is moderate to light sour, with a crisp, fresh, watery, light fruity palate. Medium to light bodied with average carbonation.

Bottle. Hazy pale rosé color with white head. Aroma is apricots, nice oak and wood. Taste is apricots, wood, earthy. Silky mouthfeel with medium carbonation. Nice!
