A blend of Danish Wild Ales aged in Amarone barrels for 8 months brewed with fresh and locally grown Opal plums from a biodynamic farm in Slangerup, DK.
A blend of Danish Wild Ales aged in Amarone barrels for 8 months was selected to pair with amazingly fresh and locally grown Opal plums from our good friend and biodynamic farmer Verner, located in Slangerup just outside of Copenhagen.
We only make Opal on years where the vintage is exceptional, and 2020 was a fantastic year for plums at Verner's farm.
The Amarone barrels pair perfectly with the flavour of sun kissed plums, low in acidity and high in aroma and flavour, Opal 2020 is sure to be a crowd-pleaser!

Sampled at pre-Borefts tasting. Hazy reddish brown with beige head. Light funk, blackberries, cassis, spicy yeast, wheat, soft oak, milky grains, soft dough. Medium sweet, under medium sour and light bitter. Medium bodied.

Bottle shared at Pre-Borefts ‘19. Hazy amber with a ring cream coloured head. Aroma of light funk, tart red fruits and mineral. Flavour is light moderate sweet and sour. Light medium bodied with moderate carbonation.

ABV: 7.0%. Unclear medium to light amber colour with a small, frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, caramel, plum - apple. Flavor is moderate sweet and light acidic with a long duration, tart, apple, plums, sour, caramel, sweet malt, oak, vanilla. Body is medium, texture is oily to watery, carbonation is soft. [20190926]

ABV: 7.0%. Clear medium amber colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, fruity malt, sugary, plum, oak, sweet malt, flowery. Flavor is moderate sweet with a long duration, sweet malt, - yeast, aple malt, dry, plum, funk. Body is medium, texture is oily to watery, carbonation is soft. [20191026]
