Bottle from their new cider club. I think this extended-ly aged bottle is available on their website. Mojito glass @home. Super fizzy, champagne rise & fall. Clear, somewhat dull 10k gold. Lemon, powdered sugar, dried apple, lavender, just really soft & powdery, but not weak or diluted. Lemon lime, lime pith, big chalk, dried apple, delicate florals, honey essence, cherry pit as it warms, supremely minerally & grassy bitter middle to end. I can't feel any oxidation in this, but I could just be enjoying myself. Somewhat wincing tartness, but lots to absorb it. Acid is moderate to great. Complexity without harshness. Crispy, dusty dry, not the absolutely smallest & professional bubbles, apple peel tannic, decent dry mouth. Basically lovely without being harsh. I've had more champagne-feeling ciders, but this one is actually quite unique. Very good. I don't always drink a full 750ml bottle, but this one I was hoping was bigger.
