Trinity is a medley of wines blended from commonly fermented pome fruits, biodynamically cultivated here in the Willamette Valley. The three fruit wines are fermented separately and aged for 10 to 12 months. They are then blended and balanced to highlight the virtues of each fruit: apples for acid and tannin, quince for aromatics and mouth feel, and pear for body and an additional touch of sweetness.

Clear 500ml from Press. Last bottle was hand bottled, had an indent. This one looks clean. Cloudy, honey, weak head pour into a pint glass @home. Best nose in the last batch of quince. Onion, some lime, mellow rose(usually lots more), gum, sour candy, potent black pepper. Candle worthy nose. Bitter-tart apples, lime, leafy greens, weak but lingering onion, a soft & appetizing yellow cake sweetness & accompanying vanilla. First gentle quince, like ever. Twinge of vinegar & basic gum on the tail. Juicy, low carb, simmering pot of half tart, mellow acid, soupy neanderthal juice. Cool.
