A very dry and crisp beer with medium hop bitterness interwoven into layered yeast expression. Notes of pear, white pepper, hay, delicate citrus, and earthy hops. Complex and seriously delicious.

Brewery draught, 6/1/25.
Rather hazy, waxy-honey-golden. Medium-sized, white head steadily to scant cover.
Stone fruit and white pepper give a standard and low clove, somewhat unexciting nose backed by honey and white bread notes from the malt. Some basement-like soft funk.
Spicy hops with lots of white pepper and mild clove. Good maltiness with very high attenuation. Avoids the heavy clove and bubble gum of the overly Americanized examples, but it's still very far from the best Belgian saisons. Chewy body initially, becoming dry and watery on the finish.
