A few weeks ago, we welcomed old friends to Canton for our very first collaboration with @belleflowerbeer.
Campanula, the botanical name for Belleflower, is the result, a hop-forward Double IPA that beautifully reflects our shared appreciation for florals, both in name and nuance.
Featuring a 2:1 pairing of Citra and Nelson Sauvin plus an addition of Nelson SubZero Hop Kief, an advanced hop product from @FreestyleHops, Campanula opens with vibrant citrus aromatics of grapefruit and orange, followed by tropical layers of pineapple and mango. On the palate, the mouthfeel is full and velvety, benefitting from a combination of locally sourced grains from @ValleyMalt and @MaineMaltHouse, a salute to our shared commitment to the local grainshed community.

Can from my brother: pours light orange yellowy haze. Aroma is melon, tropical fruit, mango. Taste is sweet juicy. Intense. Low bitterness. Very tangy. What one should expect from the style.

Canton draught, 7/8/25.
Heavily hazy, bronze-maize-golden. Small, white head.
Nice Citra-Nelson combo with juicy citrus, tropical fruit and good spice. Light honey and white bread-like malts balance gently. No resin or punch.
Bitter up front and leading through to the end. I wouldn't call it astringent but it's definitely assertive. That said, it's a welcome change of pace to have a healthy bitterness. There's still pillowy malt and big juice with spicy Nelson. Retronasal white grape and mineral. I think the Citra dominated the Nelson a bit, unsurprisingly, but this is balanced, malty and dry with none of the issues Trillium often has (chalk, punch, twangy, thinness).

Draft at Paragon, 6/26/25. Fully hazy yellowish color, white head. Tangerine, melon, a little white grape. Pineapple and grapefruit notes as well. Grainy notes. Hop forward. Bright and a little herbal / green early. Tons of flavor overall. Well made, tasty stuff.

Pours a hazy, orange-pineapple, with smallish head. Aroma is citrus and tropical fruit, with some bread and spice. Flavor is citrus and tropical fruit and almost has a touch of alcohol-burn (or hop-burn?). There's a definite astringency to the finish. Soft mouthfeel. Mild hop bitterness in the finish.

Pours murky orange into a tulip. White head with little retention recedes to hug rim. Mango, melon and tangerine aromas. Sharp and hot with sweet mango, passion fruit and melon upfront turning to dusty tangerine peel and pith in the lasting, earthy finish.
