Apricot Saison
Wild Swans takes flight on delicate notes of fresh apricot, complemented by the subtle spice and rustic charm of our farmhouse yeast. Dry-hopped with Amarillo and Simcoe to add layers of complexity, this Saison dances between earthy, floral aromatics and bright stone fruit, while maintaining a crisp, bone-dry finish that makes each sip as graceful as its namesake. A testament to the elegant intersection of traditional Belgian brewing and modern fruit-forward craft.

473ml can. Pours a cloudy blonde with yeast particles that sink to the bottom and a medium, foamy, short lived, white head that leaves soapy curtains of lace. Fruity aroma of bready wheat malt, orange peel, apricot, Belgian yeast and floral hops. Sweet fruity flavour of bready wheat malt, grapefruit, apricot, cantaloupe, Belgian yeast and spicy hops in a crisp, dry, mild bitter finish. Light body with an oily texture and average carbonation. The dry-hopping makes this seem more like an IPA than a Saison, but whatevs. It's tasty and refreshing.

On tap at Darby’s, pours a cloudy yellow with a small white head. Aroma has some chaotic estery notes, a touch of apricot, and hay — not a good expression of the saison yeast. Flavour is much the same, with muted apricots, dry hay, and some estery saison yeast that just doesn’t seem well-harnessed. Nothing egregious but this just isn’t a well-calibrated saison.

473 ml can. Pours an opaque tawny color with light head. Aromas if dried apricots and wheaty malts. Flavors follow same with additional earthy hops and a bit of Belgian yeast

Poured from the tap @ Small Gods. Hazy yellow with small white head. Soft apricot, a bit yeasty, mild melon hops, dry, okay. Lightly fruited wheat hazy ipa vibes.
