A brand new entry into the FWD program! This time we are one of the first breweries to trial YCH 803. Yes, I know, another incredibly sexy name for a product. This product is designed to be used during active fermentation and give hoppy aroma and flavor that is true to type. 803 is the essential oil fraction derived from supercritical C02 hop extract. The TLDR is that it doesn’t have any alpha or beta acid but still has all the other key essential oils.

This is a product we were super interested in trying. We've been working on amplifying the hop expression of our beers between the whirlpool and fermentation for years and this product helps us get a ton of extra hop oils into the beer without having to worry about jamming our heat exchanger and losing a ton of yield.

We used our selected Citra in the whirlpool, YCH 803 Citra during active fermentation, and then dry hopped it entirely with our selected T90 Citra.

We did not go light on the 803, it adds the equivalent of approximately 44% more hop saturation than is normal in our IPA. The hops are split just shy of 5050 dry hop to pre ferment as a result and clocks in at just over 11lbs/bbl total saturation.
